It’s September. That means summer is almost over. As soon as you’re done reading this, RUN to the grocery store and get some peaches before they’re gone. Then come right back and make these:
- 1 cup whole wheat flour
- 2/3 cup all-purpose flour
- 1/3 cup ground flax seed
- 1 tsp. pumpkin pie spice
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 5 tablespoons unsalted butter
- 2 1/2 cups buttermilk
- 2 eggs, beaten
- 2 – 3 peaches, sliced
Mix the dry ingredients. Mix the wet ingredients. Combine. Slice the peaches. Dip peach slices in batter one at a time, and place on buttered griddle. serve with real maple syrup.
This is one of my few original recipes. I also made-up my own tortilla soup, but that’s about it. Of course, I didn’t exactly make this up from scratch. I adapted this recipe from a mix of the Pinterest apple pancakes and a whole wheat pancake recipe, to which I added the flax seed… but still… I am quite proud. These are awesome! Go try them!
